Cassia versus Cinnamon 

Difference Between Cassia and Real Cinnamon

Cinnamon is a popular spice derived from the inner bark of trees belonging to the genus Cinnamomum. However, not all cinnamon is created equal. There are two main types: Cassia and Ceylon Cinnamon (often referred to as "true cinnamon").

1. Origin and Species:

   - Cassia Cinnamon: Primarily comes from the species *Cinnamomum cassia* (also known as "Cinnamomum aromaticum"). It is predominantly grown in China, Indonesia, and Vietnam.

   - True Cinnamon (Ceylon Cinnamon): Derived from "Cinnamomum verum" and is native to Sri Lanka and southern India.

2. Flavor and Aroma:

   - Cassia: Has a stronger, more intense flavor with a slightly bitter taste. Its aroma is robust and pungent.

   - True Cinnamon: Offers a delicate, mildly sweet flavor with subtle, complex notes. The aroma is softer and more refined.


3. Appearance:
   - Cassia: The quills are thicker, darker, and tougher, with a rough texture. They tend to curl inward from both sides, forming a double-scroll shape.
   - True Cinnamon: The quills are thin, light brown, and have a more delicate, paper-like texture. They curl in one direction, forming a single scroll.

4. Coumarin Content:
   - Cassia: Contains significantly higher levels of coumarin, a natural compound that can be harmful to the liver and kidneys in large quantities.
   - True Cinnamon: Has very low levels of coumarin, making it safer for long-term consumption.

5. Cost
   - Cassia: Generally less expensive and more widely available, often used in commercial products labeled simply as "cinnamon."
   - True Cinnamon: More expensive due to its labor-intensive harvesting process and is typically labeled as "Ceylon cinnamon."

6. Health Benefits:
   - Cassia: Offers some health benefits similar to true cinnamon, such as anti-inflammatory and antioxidant properties, but should be consumed in moderation due to its higher coumarin content.
   - True Cinnamon: Provides health benefits without the risk associated with high coumarin levels, making it a better choice for regular use.
